STICKY DATE PUDDING
GLUTEN FREE | VEGAN

INGREDIENTS
1 CUP PITTED DATES, ROUGHLY CHOPPED
4 TBLSP NEUTRAL OIL
1/3 CUP COCONUT SUGAR
1/4 CUP BROWN SUGAR
1/2 CUP APPLESAUCE
5 TBLSP ALMOND MILK
1 & 1/8 CUP GF PLAIN FLOUR, SIFTED
1 TSP CINNAMON
1 TSP BAKING POWDER
1 TSP BAKING SODA
1 TSP VANILLA EXTRACT
METHOD
STEP ONE preheat your oven to 180 degrees (for energy saving, don't put on your oven until you're ready to cook the granola).
STEP TWO heat dates, 1/2 cup of water (preferrably 9.5 kangen water) and baking soda in small saucepan until soft.
STEP THREE in medium bowl, combine oil and sugars until well combined. add date mix, milk, apple sauce and mix well.
STEP FOUR add remaining ingredients and mix until no flour remains. place into 6 muffin trays and bake in oven for 35 minutes (will vary if using energy saving method)
STEP FIVE best served hot with caramel sauce and salted caramel ice cream. (caramel sauce I use - combine coconut cream and coconut sugar on a high heat until bubbly. take off heat and allow to thicken - so deliciousssssss
