2 WAY GREEN CURRY
Vegan/Gluten Free/ Refined Sugar Free
I've written two recipes for you all my friends! One is a pre-made jar recipe and the other is for all those adventurous home cooks out there who want to experiment within the kitchen.
Something I've learnt from my vegan cooking endeavours is that it's VERY possible to over load your cooking with too many veggies and it can overpower the flavour of a dish. When it comes to curries or soups, I've found it's good to stick with a few ingredients and compliment them with herbs and spices.
Hope you all enjoy this hearty meal. It is the BOMB with my coconut, chilli & lemongrass rice.

METHOD
INGREDIENTS
HOMEMADE CURRY PASTE
1/2 TSP CORIANDER POWDER
1 TSP CUMIN POWDER
1/2 TSP BLACK PEPPER
3 SMALL GREEN CHILLIES (STEM + SEED REMOVED)
5 CLOVES GARLIC, PEELED
2 STALKS LEMONGRASS (OR 3 DROPS LEMONGRASS ESSENTIAL OIL)
1 HEAPED TBLSP GRATED GINGER
6 STALKS SHALLOTS
1 TBLSP FRESH TURMERIC GRATED (OR 1 TSP GROUND TURMERIC)
1/2 TSP SALT
3 TBLSP LEMON JUICE
1 MEDIUM LIME ZESTED + JUICED
2 TBLSP NEUTRAL OIL
2 TBLSP MAPLE SYRUP
VEGAN CURRY INGREDIENTS
2 TBLSP COCONUT OIL
1 SMALL ONION, DICED
1/2 ZUCCHINI DICED
SMALL HEAD BROCCOLI, STEM REMOVED
HANDFUL GREEN BEANS, CUT INTO 1/3
4 LARGE MUSHROOMS, SLICED
1 & 1/2 TBLSP VEGETARIAN OYSTER SAUCE (OR SOY)
2 TBLSP MAPLE SYRUP
2 KAFFIR LIME LEAVES
400ML COCONUT CREAM
1 TSP CHICKEN STOCK
1 CUP WATER (PREFERABLY KANGEN 9.5)
JUICE 1 LIME
CORIANDER, PEANUTS, LIME TO SERVE
OR SUBSTITUTE FOR BOUGHT GREEN CURRY PASTE
MAKE SURE IT IS VEGAN
STEP ONE heat coconut oil in large fry pan on medium heat. add onion and cook until translucent, stirring regularly. add curry paste and cook until fragrant (about 3 minutes).
STEP TWO add 1/2 cup water with chicken stock and allow to sit for another 2 minutes. stir in the remaining vegetables and cook for 5 minutes.
STEP THREE add oyster sauce, kaffir lime leaves, maple syrup and coconut cream. reduce to low heat and simmer for 15 minutes. stir occasionally. squeeze in lime juice prior to serving.
STEP FOUR serve with rice, coriander and peanut.

STEP ONE blend all the homemade curry ingredients together in a high speed blender. use 2 tblsp per recipe (depending on desired heat) and follow the above steps.
