CHOC NUTTY GRANOLA
VEGAN | GLUTEN FREE | REFINED SUGAR FREE
INGREDIENTS
METHOD
2 CUPS NUTS OF CHOICE (ALMONDS, CASHEWS, WALNUTS ARE MY FAVE)
2 CUPS PUFFED RICE (ENSURE GLUTEN FREE IF AVOIDING GLUTEN)
1 CUP ACTIVATED BUCKWHEAT KERNELS
2 TBLSP CHIA SEEDS
1/4 CUP OF LIQUID SWEETENER (MAPLE SYRUP, RICE MALT SYRUP, AGAVE)
2 TBLSP NUT BUTTER (PEANUT BUTTER, ALMOND BUTTER, CAHEW BUTTER)
2 TBLSP COCOA POWDER
PINCH SALT
1 CUP COCONUT FLAKES
STEP ONE preheat your oven to 180 degrees (for energy saving, don't put on your oven until you're ready to cook the granola).
STEP TWO combine all ingredients together except for the coconut flakes. stir until well combined.
STEP THREE evenly spread granola mix onto a large lined baking tray. I like to use a silicone baking liner. cook in oven for 10 minutes.
STEP FOUR remove from oven, mix granola on tray and add coconut flakes. place back in oven for another 5 minutes.
STEP FIVE allow to cool completely before placing in an airtight glass jar. this allows for the 'crunch' to remain until you've finished the granola.
